Keto Chicken Tighs With Mushrooms Sauce
These boneless, skinless chicken thighs with mushroom sauce are an easy, quick, and deliciously creamy keto recipe, and it's all done in a pan.
INGREDIENTS
Chicken thighs
- 750 g boneless skinless chicken thighs about 5-6 fillets
- 1 fresh lemon juice
- 2 cloves of garlic, minced
- 1 C. 1 tsp dried thyme
- 1 C. 1 tsp rosemary
- 1 teaspoon of salt
- 1/2 teaspoon crushed black pepper
- 2 tablespoons olive oil
Creamy mushroom sauce
- 1 tablespoon olive oil
- 250 g sliced fresh mushrooms
- 2 cloves of garlic, minced
- 1 C. 1 tsp fresh chopped parsley
- 1 C. 1 tsp dried thyme
- 1 C. 1 tsp dried rosemary
- 1 cup heavy cream
- 1 teaspoon nutmeg
- salt and black pepper
- 1/2 cup grated fresh parmesan

INSTRUCTIONS
Chicken thighs
- Pat the chicken thighs dry with a paper towel and cut off the excess fat. Season the chicken thighs with lemon juice salt. Let it absorb the lemon juice for 15 minutes.
- Mix the garlic cloves, thyme, rosemary and pepper.
- Coat chicken evenly with combined seasoning.
- Heat 1 tablespoon oil in a large skillet or skillet over medium-high heat and sear the chicken thighs in batches until golden on each side and no longer pink in the center (about 8 minutes on each side, depending on the thickness).
- Transfer to a plate; set aside and keep warm.
Creamy mushroom sauce
- In the same pan or frying pan, put the olive oil and add the mushrooms. Season with salt and pepper and cook until tender (about 3 minutes).
- Add garlic, parsley, thyme and rosemary; sauté until fragrant (about 1 minute).
- Add the heavy cream, bring to a boil, then reduce the heat and continue cooking until the sauce thickens slightly. Add the nutmeg. Stir in the Parmesan and let it melt in the sauce for an additional 4 minutes, stirring occasionally.
- Return the chicken to the pan. Test the taste and season with salt and pepper to your taste. Garnish with fresh parsley and parmesan. Serve immediately.
